Summer Fruit Salad with Lemon Dressing
A colorful and refreshing mix perfect for warm days.

Ingredients:
- 1 cup fresh pineapple, chopped
- 2 kiwis, peeled and sliced
- 1 cup mandarin orange segments (fresh or canned in juice)
- 1 tablespoon fresh mint leaves, chopped (optional)
For the Lemon Dressing:
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon lemon zest
Instructions:
- In a large bowl, combine the chopped pineapple, sliced kiwis, and mandarin orange segments.
- In a small bowl, whisk together the lemon juice, honey, and lemon zest to make the dressing.
- Pour the dressing over the fruit and toss gently to coat.
- Add chopped mint if desired, and chill in the refrigerator for 15–30 minutes before serving.
Tip: This salad is best enjoyed fresh, but can be stored in the fridge for up to one day.
