Summer Fruit Salad with Lemon Dressing

Ingredients:

  • 1 cup fresh pineapple, chopped
  • 2 kiwis, peeled and sliced
  • 1 cup mandarin orange segments (fresh or canned in juice)
  • 1 tablespoon fresh mint leaves, chopped (optional)

For the Lemon Dressing:

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lemon zest

Instructions:

  1. In a large bowl, combine the chopped pineapple, sliced kiwis, and mandarin orange segments.
  2. In a small bowl, whisk together the lemon juice, honey, and lemon zest to make the dressing.
  3. Pour the dressing over the fruit and toss gently to coat.
  4. Add chopped mint if desired, and chill in the refrigerator for 15–30 minutes before serving.

Tip: This salad is best enjoyed fresh, but can be stored in the fridge for up to one day.
